Waverley Hills Wine Estate, Tulbagh, Western Cape
Waverley Hills Wine Estate is situated at the foothills of the Witzenberg Mountains between the towns of Tulbagh and Ceres in the Western Cape. The area is particularly well known for its pristine fynbos. Recognizing its responsibility to preserve this ecologically valuable floral kingdom, Waverley Hills has become a certified organic wine farm as well as being actively involved in preservation.
The farm was converted to organic farming methods in 2000 when all chemical fertilizers, pesticides and herbicides were replaced by natural organic methods of control. The farm is certified organic by the Societe Generale de Surveillance and the National Organic Program of the USA. The results are a far healthier farm producing smooth fresh wines with 50% less sulphur than traditionally produced wines.
Grape varieties grown on the estate include Cabernet Sauvignon, Merlot, Mourvedre, Shiraz, Viognier, Chardonnay, Sauvignon Blanc, Semillon, Pinot Grigio, Grenache Noir. The estate also produces olive oil and a number of olive products from its own organic olive groves and sells from its own deli.
