The Plettenberg champions world vegan month
The Plettenberg is celebrating World Vegan Month (November) with the introduction of two new, plant-based dishes created by newly appointed head chef, Kyle Macaskill.
1 November is recognised globally as World Vegan Day to mark the establishment of the Vegan Society in 1944. It was in those early days that the phrases ‘vegan’ and ‘veganism’ were first coined. Today, more than 70 years later, the benefits of veganism for humans and the natural environment are widely known and chefs all over the world are preparing creative vegan menus to meet the increasing demand from diners.
Kyle Macaskill, who was recently promoted to head chef at The Plettenberg in Plettenberg Bay, says that he too has noticed an increased demand from diners for vegetarian and vegan options. ‘I enjoy experimenting a little and my aim is to execute a perfect marriage of flavours using local produce. The two new dishes have been created to enchant the senses of not only our vegan patrons but our Meat-free Monday followers too.’ A selection of vegan-friendly wines is available for perfect pairings.
The warm roast cauliflower salad comprises chargrilled roast cauliflower, avocado mousse, tomato salsa, African pesto, balsamic reduction, and a micro salad to reveal the distinct African and Asian flavours of these cultures.
Taking on a strong Asian influence, the sesame fried soba noodles are served with ponzu-seared summer greens, charred onions, roast baby tomatoes and kimchi to deliver a whopping taste sensation. The flavour profile includes the nuttiness of toasted sesame and buckwheat noodles (free from gluten and any animal products), sweetness from the ponzu-seared vegetables and an umami-packed punch from the homemade kimchi which is rich in probiotics.
