Head Pastry Chef

A fantastic opportunity for a creative, self-motivated Pastry Chef to join a well-established brigade based a 5* Leading Hotel of the World.
The successful candidate will be required to assist with the on the floor management and the control of the culinary areas in the F&B department with primary focus of the Pastry / Bakery production including food service, catering event planning for the share of the pastry department.
Duties include, but are not limited to:
- Keep abreast of trends in the culinary industry
- Plan production to facilitate daily requirements
- Analyze recipes and create a recipe manual in order to standardize products
- Assign prices to menu items, based on food cost, labour costs and overhead costs
- Design special product offerings and showcase your abilities
- Control appropriate production to avoid loss or wastage
- Control financial allocation of distributed products to the relevant outlets
- Coordinate the planning, budgeting, purchasing of goods
- Maintain excellent grooming standards
- Maintain strong supervisory skills
- Maintain all administration and IR related work in your department
Qualifications
- Matric
- Professional Chefs diploma through a recognised institution
- 6 years’ experience of which 3 years must be as a Head Chef Pastry
- 5* hotel or resort experience (multi-outlets)
- Fully computer literate MS Office essential, working knowledge of SAP advantageous
- Financial management / cost control would be advantageous
