SOUS CHEF

Salary: R 15000 – R20 000 CTC

Leading Hotel of the world based in George requires a dynamic, energetic Sous Chef to join their team.

The successful candidate will be required to assist with floor management and control of the culinary areas within various department including, food production, food service and catering & events, while providing a unique 5* product offering in line with changing culinary trends.

Duties would include:
• Keep abreast of trends in culinary industry.
• Develop and analyse recipes to assign prices to menu items, based on food , labour cost and overhead cost.
• Design special product offering to maximize usage of stock and to make use of slow moving stock.
• Coordinate planning, budgeting, or purchasing for all the food operations within establishments to ensure efficient operation.
• Monitoring and controlling resources and assist in overseeing the spending of money.
• Providing guidance and direction to subordinates, including training, coaching, mentoring, setting and monitoring performance standards and discipline.
• Ensure that SHEQ & FCS requirements for each kitchen division are met.

Qualifications:
• Matric
• 3 Year chef diploma
• Fluent in English and Afrikaans
• Computer literate in MS Office, SAP, advantageous
• 5 years experiences in 4* or 5* of which 2 years as a Sous Chef in 5*
