Described by colleagues as energetic, driven and organised, Griffiths began her career with a B Comm (Business Economics and Marketing) from the University of the Witwatersrand and went on to attain a Higher Diploma in Education (HDE) and is currently studying towards an MBA.
After several years in the private sector, she branched off into her teaching career, and then went on to owning several businesses with her husband. However, she then decided to combine her passions for education and business management by becoming the campus principal at Rosebank college in Durban until January 2011 and then joined Damelin College where she was General Manager until the beginning of this year.
She says she was drawn to the International Hotel School not only because of better opportunities for herself, but also in light of its great brand reputation and supportive local head office.
Griffiths is married and has two children – 17 year-old son Dylan and 15 year-old daughter Simone. Her hobbies include running, playing golf, reading and cooking. In addition to sharing good food with family and friends – Italian food, cheese, chocolates and wine – Griffiths enjoys travelling both locally and abroad. Her favourite places include Mpumalanga (Hazyview / Sabie area), the Drakensberg, Cape Town & Winelands and Colarado where she relishes the golf and swimming in the summer and skiing in the winter.
