Boozy Tiramisu Cake
Margeaux from Pack ‘n Bake Hermanus shares her boozy tiramisu recipe.
Perfect for the festive season!
Ingredients:
- 2 tablespoons castor sugar
- 100ml very strong coffee or espresso
- 8 tablespoons amaretto
- 350g sponge fingers
- 500g mascarpone cheese
- 150ml cream
- 4 tablespoons icing sugar
- 200g dark chocolate, melted
- cocoa for dusting
Method:
Line a deep 20cm loose based cake tin with cling wrap, leaving some overhanging the sides.
Dissolve the sugar in the coffee, then mix in 4 tablespoons amaretto. Dip the sponge fingers in the mix and layer a third onto the base of tin.
Whisk the marscarpone cream and icing sugar and the remaining amaretto until thick, then spoon half over the sponge fingers. smooth, then drizzle with half the melted chocolate.
Repeat layering, finish with the sponge fingers. Wrap the cling wrap over the top and chill for 3 hours.
Uncover, dusting heavily with cocoa then remove from the tin. Take off the cling wrap and transfer to a serving plate.
Cover with chopped up bits of chocolate and serve!
Whip this up in 30 minutes!
