Local chef in national top three
Local chef, Jacques Buys, from Flava Café in Wilderness, recently scooped third place at the National Jeunes Chef Rotisseurs cooking competition held in Johannesburg.
The contestants had a mandatory list of ingredients to use and Buys produced an amazing pear soufflé served with an orange parfait, on a rosewater and fig jelly as dessert. His starter was a prawn serviche, pickled cucumber and deep fried baby octopus heads. His main course was a rare roast sirloin, marrow bone, puree of brinjal and courgette.
He was well prepared to face the heat through the guidance of Carol Wicht and Karen du Plessis, who coached him to prepare for this competition.
Wicht, who is the national culinaire and organiser of the competition will take the winner to Istanbul in Turkey in September to compete against 24 other countries.
